Oolong teas are richly floral, highly aromatic, and possess fresh, clean lingering flavors. They are among the world’s finest and most expensive teas because only a small quantity of these teas are produced in two short growing seasons. Grown at high altitudes, the flavor and aroma become concentrated, and the percentage of amino acids in the fresh leaf contributes additional sweetness to the teas.

Processing the leaf entails anywhere from 8-16 steps in withering, resting the leaves, firing, rolling, and final firing.
